MIIK - Nlilk is hereby defined to be the lacteal secretiont practi- <br />cally free from colostrum) obtained by the complete milking of one or more <br />healthy cows,, which contains not less than 8 percent milk solids-not-fat and <br />not less than 34 percent milkfat. <br />A-1. GOAT MIIK - Goat milk is the lacteal secretiong practically free <br />from colostrumq obtained by the complete milking of healthy goats. The word <br />"milk" shall be interpreted to include goat milk. <br />B. NQLKFAT - Milkfat, or butterfatg is the fat of milk. <br />B-lo CREAM - Cream is a portion of milk which contains nat less than <br />18 percent milkfat. <br />g-2, SpUR CREAM - Sour cream is cream the acidity of which is more <br />than 0.24 percentg expressed as lactic acid. <br />B-3. LIGHT CREAM, COFFEE CREAM, OA TABIE CREAM - Li9ht creamg coffee <br />creams or table cream$ is cream which contains less than 30 percent milkfat. <br />g-4. WHIPPING CREAM - th'hipping cream is cxeam which contains not less <br />than 30 percent railkfat. <br />B-5. LIGHT WHIPPING CREAM - Light whipping creaaa is whipping cream <br />which contains less than 36 percent milkfato <br />B-6o HEAVy CREAM9 OR HEAVY WHIPPING CREAM • Heavy cream or heavy <br />whipping creamg is whipping cream which contains not less than 36 percent <br />milkfat. <br />
